I be jammin in the kitchen.
I don't can as much as I use to, but I still make jam and jelly.
Last year we ran out and it was a disaster in the making.
I tried buying a few jars just to see how they tasted and was sorely disappointed. If you know of a good, no, a great jam company, I might be willing to try them.
The peach I make has only sugar, lemon juice and crushed peaches.
I have made this recipe for many years and it has only failed me once.
The year it failed it candied in the jar. There was no way to get it out of the jar, it was sticky, sticky, and stuck. I thought and thought about what happened and then had an idea. I poured rum in one jar, tequila in another jar, and peach schnapps in another, then every so often I would stick a knife in, and allow the alcohol to start working on breaking down the sugars. After a few months I could shake the jars, then months later I had the best alcohol infused peach syrup that we poured over ice cream.
It was freaking fabulous.
On my way to the studio yesterday I was surprised to find some late blooming magnolias. The deepness of the petals has always made me think of the clean, sun dried, white sheets of my youth. I always want to open my arms and fall in.

This jam looks fabulous. I'm online this morning looking for a good jam recipe. I almost want it to fail now so I can have that alcohol peachy stuff for ice cream!! I've been canning a lot - beans, tomato sauce, diced tomatoes -- I'm always glad in the winter that I've put up some good summer eating!
What kind of jam are you making? I miss those good tomatoes in the winter, I do freeze them if I have extra.
Excellent, creative save with the candied peaches! I'm trying to convince J we need to make peach ice cream tomorrow.
I don't think there is a store bought jam that can come close to homemade. I miss my mother's strawberry jam.

Wish I had read this a few days ago, I had strawberry jam candy on me, the alcohol trick would have been good, instead I threw it all out :(
I enjoy baking, but I have never canned anything. This looks delicious!
My canning has really slowed down since the kids packed out of here. Nonetheless tomatoes are just starting here and peaches should be in in a week or two. Blueberries didn't last long this year and missed those. Great tip!! Thanks Meredith❣️
WE only picked blueberries enough to eat and make some yummy sweets.... the peaches are making me happy!
